Ingredients

  • Chicken breast tenders, Cooked, Cut – 4 oz (leave off the chicken or use Tofu to make it vegetarian)
  • Spinach, Raw – 1/2 cup
  • Tomatoes Red, Ripe, Raw – 4 slices, medium
  • Parmesan cheese, Grated – 1 tbsp
  • Mozzarella cheese, Part skim milk – 1/4 cup, diced
  • Pita bread, Whole-wheat – 1 pita, large, 6-1/2″ diameter
  • Garlic powder – 1/4 tsp
  • Italian seasoning – 1 tsp
  • Garlic cloves, minced – 1 cloves
  • Olive oil – 2 tsp

Directions

  1. Pre-heat oven to 400
  2. Rinse spinach, place in microwave safe bowl, microwave for 30 seconds then drain the water.
  3. Place pita breads on an ungreased baking sheet; brush with oil. Top with garlic cloves, tomato slices, mozzarella cheese, spinach, chicken, garlic powder and remaining cheese; sprinkle with Italian seasoning.
  4. Bake for 15 minutes or until cheese is melted. Top with basil.
